This is pasta made with a passion for tradition. It’s crafted with celebrated semolina flour from the stunning coastal and sun kisses hill regions of southern and central Italy. Milled on site with the finest wheat berries, capturing the freshest flavors and scents and the highest protein content.
Our slow drying process replicates the “sun and wind’ conditions utilized by Italian families for centuries to prepare this dietary staple. This patient, time-honored process results in a pasta that absorbs water slowly when cooking, ensuring the final product is perfectly al dente.
